Spicy Goji Berry Soup
Ingredients:
1 cup dried goji berries soked over night
1 cup chopped tomatoes or (1 small can)
2 cups vegetable stock
1 large onion, diced
1 tbsp olive oil
1 tsp chili powder - to taste
1 tsp coriander powder - to taste
1 tbsp fresh coriander leaves, torn - garnish
Directions:
1. Wash and soak the goji berries overnight, strain and reserve the soaking liquid
2. Heat the olive oil in a medium saucepan and sauté the onion and chili for a couple of minutes before adding the tomatoes, goji berries. Stir for another few minutes.
3. Add the stock, and reserved socking liquid bring to the boil and reduce to a simmer for 10 minutes.
4. Adjust liquidity if needed with more stock, add coriander and blend with emersion blender until the soup until smooth.
5. Decorate with a few fresh coriander leaves, black pepper. (Optional: swirl in a tsp of yogurt)
